This is a delicious tomato soup that I adapted from Woolies Babies recipe book “meals for babies and toddlers” . I bought the book in 1997 and have been making this ever since. As the kids have grown older I have added garlic to the soup and a little salt and even on occasion cream/Orley whip/Alpro Single. This soup is suitable for babies from 1 year. The recipe makes 4 smallish servings. I usually make double.
6 Israeli tomatoes
1 can tomato and onion mix
1 can chopped Italian tomatoes
1/4 tsp of dried parsley or 5 ml fresh chopped
1/4 tsp of dried basil or 5 ml fresh chopped
Stick everything in the blender. Pour into a pot and heat to just before boiling. Simmer for 15 min.
While the soup is simmering, put some grated cheese on bread and toast it in the oven. When the cheese is melted, cut it up into bite size pieces, and serve it either in the soup or on the side.
